Apple taco cups

1 tbs Mexican seasoning
2 chicken breast fillets, trimmed
1 tbs olive oil
1 corn cob, kernels removed
8 apples
1/3 cup whole egg mayonnaise
1 tbs chipotle in adobo sauce
1/3 cup crushed corn chips
1 large avocado, mashed


  1. Sprinkle the seasoning over both sides of the chicken. Heat oil in a frying pan over medium heat. Add the chicken, cook 6-7 minutes each side or until just cooked through. Remove to a plate, cover and stand 10 minutes. Add the corn to the warm pan, cook 1 minute. Set aside to cool.
  2. Combine the mayonnaise and chipotle in a bowl. Shred the chicken and add to the mayonnaise with the corn and corn chips. Mix well.
  3. Cut 1cm top off each apple. Set the tops aside. Core the apples, leaving a little in the base. Using a teaspoon carefully remove the apple flesh to halfway forming a well and leave 1/2cm border. Finely chop 1/3 cup of the removed apple flesh and stir into the chicken mixture.
  4. Spoon the chicken mixture into the apples. Top with a dollop of mashed avocado and return the apple lid.

Tip If you’re short on time, you can replace step 1 with chopped barbecue chicken. You will need about 2 cups.

Tip You can fill the apple cups with all kinds of your kids favourite sandwich fillings; like chopped ham, cheese and tomato; chopped roasted pumpkin, corn and sesame seeds; chopped chicken and tabbouleh.
