Apple Sandwich Snacks
Chicken & brie
60g (1/2 cup) chopped cooked chicken
1 tbs whole egg mayonnaise
1 tbs herbs (like thyme, chives, parsley)
30g brie, chopped
Ham, mustard and cream cheese
50g cream cheese spread
3 tsp Dijon mustard
60g (4 thin slices) ham
1 small avocado
1 tsp chipotle in adobe
1 green onion, finely chopped
- For the chicken and brie; cut four, thick slices from one apple. Combine the chicken, mayonnaise and herbs. Spoon half over 1 apple slice, top with half the brie. Sandwich together with a second apple slice. Season and sprinkle with thyme. Repeat with remaining apple, chicken, brie and herbs.
- For the ham, mustard and cream cheese; combine the cream cheese and mustard together. Cut four, thick slices from one apple. Spread half the cream cheese mixture over 1 apple slice, top with 2 slices ham. Sandwich together with a second apple slice. Repeat with remaining apple, cream cheese and ham. Season.
- For the Guacamole; smash the avocado, stir in the chipotle and green onions. Cut four, thick slices from one apple. Spoon half the guacamole onto 1 apple slice, sandwich together with a second apple slice. Repeat with remaining apple and guacamole.

Tip Each filling makes 2 apple sandwich snacks
Tip If you’re packing them for lunch box, brush the apples lightly with a little lemon to prevent them discolouring.
