Apple Quesadillas

1 large apple, thinly sliced
4 soft tortillas

Savoury fillings:
1/2 cup grated cheese
100 g shaved ham

To serve
Tomato salsa

Sweet fillings:
2 Tbsp cream cheese
1/4 tsp cinnamon

To serve
Maple syrup


Arrange two tortillas on a board, sprinkle the closest half of each with a quarter of the grated cheese. Top with ham, half the apple slices, and remaining grated cheese. Fold the far edge of the tortillas towards you to enclose filling.

Spread cream cheese over remaining two tortillas and sprinkle with cinnamon. Top with remaining apple and fold in half to enclose filling.

Preheat a large skillet or frying pan over medium heat and wipe or spray lightly with oil. Add 2 quesadillas to pan and cook 2 – 3 minutes per side until tortillas are golden and filling is warm. Repeat with remaining assembled tortillas.

Cut quesadillas into wedges. Serve ham, cheese and apple with salsa. Serve cream cheese and apple with a drizzle of maple syrup.
