Peanut and Apple Protein balls
Makes about 20
½ cup ( 130 gm ) of crunchy dark roasted peanut butter
½ an apple, cored unpeeled rough chopped
50 gm (1/4 cup) dried dates – or 3 fresh
150 gm (1 ½ cups) quick cooking outs
½ teaspoon cinnamon
1 Tablespoon chia seeds
1 Tablespoon honey
- Put all the ingredients into a food processor and blitz till the mixture gathers together in a ball.
- If the mixture remains stuck to the sides of the processor and is very sticky add a ¼ cup more oats ( or a couple of Tablespoons)
- Put even lumps of mixture onto a lined tray spaced out evenly. Go back and roll them into neat balls and put into a sealed container and store in the fridge for up to a week.
